~2 7-oz. boneless, skinless chicken breasts, defrosted ~One package (about a handful) dried porcini/wild mushrooms ~9 oz. mixed wild mushrooms, torn ~1 lg. wine glass dry white wine (like chardonnay) ~3 large pats butter ~1 handful (about 5-7 sprigs) fresh thyme ~aluminum foil |
Procedure: |
Preheat oven to 425º. Make a "bag" with the aluminum foil by placing two one-and-a-half-foot-long pieces on top of one another and sealing three of the sides by folding them over and over a couple times. Combine all ingredients (including chicken) and place in the bag. Seal up the last side and place in a roasting pan. Bake for 30 minutes. Recommended sides: White Rice, steamed with 1/2 water and 1/2 chicken broth steamed veggies (green beans, carrots, broccoli) |
