Ingredients: |
4 large celery ribs 1 red apple 1/3 c. shredded smoked chicken breast 3 Tb. crumbled bleu cheese (Gorgonzola or Maytag) 2 Tb. mayo 1 1/2 Tb. lemon juice salt and pepper celery leaves, for garnish (if desired) |
Procedure: |
Remove a thin strip from the back of each rib of celery to create a flat bottom. Cut celery ribs diagonally (on a bias) into 1-inch or bite-sized pieces. Halve apple lengthwise and core. Slice apple into matchstick-sized pieces. Gently fold apple with remaining ingredients until just combined. Season with salt and pepper to taste. Top each piece of celery with a mound of apple-cheese mixture and garnish with celery leaves. |
