Recipe for Marianne's Mom's Sponge Cake

Type:   Dessert
Ingredients:   4 egg yolks
1 cup sugar
3 tablespoons cold water
1 cup flour
1 1/4 teaspoon baking powder
1/4 teaspoon salt
4 egg whites
1 teaspoon vanilla or lemon extract
Procedure:   Beat yolks and water until thick and lemon-colored. Add sugar gradually and beat 2 minutes.
Mix and sift flour with baking powder and salt and add to first mixture.
When thoroughly mixed, add whites of eggs, beaten stiff, and flavoring.
Bake 30 minutes in a moderate oven, 350, about 20 minutes in greased and floured pans.
Tip: Take one teaspoonful of sugar from cup and mix into it 1/8 teaspoon of cream of tartar. Beat into stiffly beaten egg whites.

Remove layers from pans immediately. If allowed to cool, they will stick.
Yields:   two layers
