Recipe for Potato Chip Cookies

Type:   Dessert
Ingredients:   1 cup unsalted butter, softened
1/4 cup granulated sugar, plus 1/2 cup for dusting
1 tsp. vanilla extract
2 cups all-purpose flour
1/2 tsp. cinnamon
3/4 cup potato chips, crushed
1/2 cup pecans, chopped
Procedure:   Preheat oven to 375.
Cream the butter and 1/2 cup sugar in a large bowl with an electric mixer on high speed. Reduce speed to medium and add the vanilla. Add the flour and cinnamon to the butter mixture. Beat on low speed until incorporated. Fold in the potato chips and pecans. Form into approximately 1-1/2 inch balls. Dredge in remaining sugar. Place on parchment-lined baking sheet 2 inches apart. Bake until golden brown around the edges, about 13 minutes. Let cool on cookie sheets for 5 minutes, then transfer to a cooling rack.
Yields:   2 1/2 dozen
