Recipe for Butter Toffee Cookies

Type:   Dessert
Ingredients:   1 cup sugar
3/4 cup butter, softened
1 egg
1 tsp. vanilla
2 cups all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 cup English toffee bits or chips

Procedure:   Heat oven to 350º.
In large bowl combine sugar, butter, egg and vanilla.
Beat at medium speed, scraping bowl often.
Add flour, baking powder and baking soda.
Beat on low until well mixed.
Stir in toffee bits by hand.
Shape dough into 1" balls. Roll in sugar.
Place 2 inches apart on ungreased cookie sheet.
Flatten each ball with the bottom of a glass. If glass sticks, dip glass in sugar.
Bake for 9 to 11 minutes until lightly browned. Do not overbake.
Sprinkle with sugar while still warm.
Cool completely.
Yields:   4 dozen
