Recipe for Salsa chicken and rice

Type:   Dinner
Ingredients:   1 1/3 cups long grain rice
2 cups sliced fresh mushrooms
3 cups salsa (mild or spicy)
1 can condensed cream of chicken soup
8 ounces sour cream
1/2 cup chicken broth or water
1 1/2 pounds boneless, skinless chicken
breasts, cut into 1 inch pieces
Procedure:   Heat oven to 350 degrees.
In a large bowl, mix rice, mushrooms, salsa, soup, sour cream, broth, and chicken.
Spoon into 9X13 baking dish coated with cooking spray. Cover and bake 45 minutes.
Uncover and bake 10 minutes more or until bubbly.
Yields:   8 servings
