Recipe for Apple Strudel Muffins

Ingredients:   2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoon vanilla
1 1/2 cups chopped apples

1/3 cup packed brown sugar
1 tablespoon all purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Procedure:   Preheat oven to 375º.
Mix flour, baking powder, baking soda, and salt in small bowl.
Prepare muffin tin by greasing or lining with paper muffin liners.
In a large bowl beat together butter, sugar, and eggs until smooth. Mix in vanilla. Stir in apples and gradually blend in the flour mixture. Spoon into prepared muffin tin.
In a small bowl mix brown sugar, flour, and cinnamon. Cut in butter until mixture is like coarse corn meal. Sprinkle on muffins.
Bake 20 minutes.
Yields:   12 muffins
