Recipe for Red Velvet Cake

Type:   Dessert
Ingredients:   Cake
1 package yellow cake mix
2 tablespoons cocoa
5 large eggs
1/2 cup vegetable oil
1 cup buttermilk
2 (1 ounce) bottles red liquid food coloring
Cream Cheese Frosting
1 (8 ounce) package cream cheese
(softened)
1/4 cup butter or margarine (softened)
2 1/2 cups sifted confectioner's sugar
1 teaspoon vanilla

Procedure:   Mix all cake ingredients for two minutes
Place in greased and floured cake pans (round, rectangular, or cupcakes). Bake according to package directions.

Cream cheese frosting:
Beat cream cheese and butter until creamy. Gradually add sugar until smooth. Stir in vanilla, beating until blended.
Yields:   1 cake (24 cupcakes)
