Recipe for Corn Fritters

Type:   Other
Ingredients:   Fritter Batter
1 cup all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1/2 cup milk
1 teaspoon salad oil
1 cup corn (fresh or frozen)

For frying:
3-4 inches fat or oil, heated to 375




Procedure:   Measure all ingredients for fritter batter into bowl. Beat until smooth. Add corn, making sure corn is thawed completely or thoroughly dry before mixing into fritter batter.
Drop level tablespoonfuls into hot oil and fry about five minutes.
Drain.
Especially good served with syrup.
Yields:   several
