Recipe for Bread and Butter Pudding


6 tablespoons unsalted butter, divided
1/3 cup golden raisins
3 tablespoons dark rum
10 slices dark brown bread
10 tablespoons ginger marmalade
4 egg yolks
1 egg
3 tablespoons sugar
2 1/4 cups heavy cream
3/4 cup plus 2 tablespoons whole milk
1 teaspoon ground ginger
2 tablespoons brown sugar

Preheat oven to 350.
Grease shallow baking dish with some butter.
Pour rum over raisins and microwave for about 1 minute. Let them stand.
Make sandwiches with the brown bread, butter and jam.
Cut sandwiches into triangles and arrange them with points up.
Pour raisin mixture over bread. Whisk eggs and sugar and milk and cream. Pour over bread.
Leave about 10 minutes.
Smear bread tops poking out of cream mixture with butter, ginger and sugar.
Put pudding dish on baking sheet and bake for about 45 minutes.
Let sit for 10 minutes.
