Recipe for Scallops with Thyme

Ingredients:
2 teaspoons salt
1 teaspoon cayenne pepper
1 pound sea scallops, rinsed and patted dry
3 tablespoons butter
2 cloves garlic, minced
2 scallions (white part only) chopped
1 tablespoon fresh thyme or 1.5 teaspoons crumbled dried thyme
juice of 1/2 lemon

Procedure:
Combine the salt and cayenne in a small bowl. Sprinkle the mixture over the scallops. Heat the butter in a heavy skillet or wok over medium-high heat until it is bubbling and beginning to brown. Add the garlic and scallions, and cook, stirring, for 30 seconds. Add the scallops and thyme to the skillet and cook, turning the scallops, about 4 minutes, until they are lightly browned. Drizzle with the lemon juice and serve immediately.
