Recipe for Parmesan Chicken for Two

Ingredients:
2 chicken breasts, pounded flat
1/3 c. flour
1/3 tsp. kosher salt
1/4 tsp. black pepper
1 egg
1/2 Tbsp. water
1/2 c. seasoned bread crumbs
1/4 c. grated Parmesan cheese
1/2 Tbsp. olive oil
1 pat butter
Garnish:
2 handfuls mixed salad greens
1 lemon's juice
2 Tbsp. olive oil
salt & pepper
Procedure:
Combine the flour, salt, and pepper on a plate.
In a wide bowl, beat the egg and water.
On a separate plate, combine the bread crumbs and Parmesan cheese.
Coat the chicken with the flour mixture, then dip into the egg mixture and dredge through the bread crumbs, pressing lightly.
Heat butter and olive oil in a saute pan and cook each side of the chicken over medium heat until cooked through.
Mix the lemon juice, olive oil, and salt & pepper and toss with the salad greens. Serve over the chicken with more grated Parmesan cheese.
